How To Shoot Dark-skinned Subjects

The questions, "Do you photograph dark-skinned subjects differently than light-skinned subjects?" and "How do you expose and light dark-skinned subjects?" are some of my favorite questions. I'm always surprised by the variety of answers I get...even from photography instructors.
So, what have you heard? And what do you do?

Ian the way I handle it depends on what meter I am using. If im using my camera's reflective meter than I am not going to make a dark-skinned person middle gray and will under expose. If I am using flash I will use the incident light meter and go from there. I shoot to the right a lot so I push it a little more than my incident meter says.
